Two Roll Up Recipes

There were several requests, after the football luncheon, for the roll up recipes so I am posting them both. Enjoy!

Tortilla Roll-Ups from Cheryl Jorgenson

1-8oz package of Philadelphia Cream Cheese

1-sm can green chillies (diced)

1-sm can chopped black olives

chopped green onion (no stems--only about 2..finely chopped)

1-cup finely shredded Cheddar Cheese

1-cup Mayo (I use Hellman's--best flavor)

1-pkg Hidden Valley Ranch seasoning (down salad dressing isle)

1-pkg tortilla (10 inch)

Mix all ingredients together--make sure you drain the black olives and chillies. When completely mixed, spread onto a tortilla, roll up, wrap in Syran Wrap. When your completely done, place all wrapped tortillas into the refrigerator to harden. When time to serve, slice and place on serving tray. Its' great to serve with salsa as a dipping sauce...yum. We've tried making this with fat-free items, doesn't taste as good...if your going to cheat make it good.

Spinach Bite Roll Ups from Lisa Limbaugh

1 C mayo
1C sour cream
1 package Hidden Valley Ranch Dry Mix
10 -12 pieces bacon, crumbled (turkey or pork work beautifully)
3 - 4 green onions thinly sliced
1 box frozen chopped spinach
20 pack flour tortillas

Thaw spinach and squeeze out excess moisture. Mix all ingredients together. Smooth on tortillas. Put in fridge for 1 hour (or over night) to set. Serve sliced into thirds or whole.


Both recipes are good and different enough that they can be served together should you have an occassion to need a variety.
