Lisa's version of Pad Thai

Last night we had the Harkey's over for my version of Pad Thai. Here is the recipe in picture form. Not only is this an extremely tasty dish, it is colorful and textural.

We started the meal with Egg Drop Soup. The trick to getting the egg stringy and white is to beat the egg in a separate bowl first. Then pour in the HOT soup slowly while stirring one way only. It works! Once in individual bowls, we added chopped green onions for flavor and color.
The first step in Pad Thai is cooking the meat and onions in a Pad Thai Sauce.
Next you cook the veggies in Sesame oil. The vegetables includes zucchini strips which you see on top.
Next you cook the noodles by themselves. (You guessed it- Ramon Beef Noodles!)
Everything is put together to make the final dish.
I had chopped cilantro, crushed peanuts and limes for the top.

It was AWESOME! We had a few leftovers last night, but I don't know that I'll have any to enjoy this evening when I get home!
